Orzo Salad

Silly me, I forgot to eat vegetables last week.  To prevent scurvy I decided to make Bunnie’s  famous orzo salad.  It is an easy, delicious way to add vegetables to any meal.  It is a great side dish but sometimes I add grilled shrimp to make it a full meal!

Ingredients:

  • 1 box of orzo (make sure you salt the water!)
  • 1 red pepper
  • 1 yellow pepper
  • 1 bag spinach, julienned
  • 1 package of feta cheese with basil
  • Hidden Valley Ranch Dressing dry packet
  • 1/2 cup olive oil
  • 1 tablespoon garlic

Directions:

Boil the orzo. Dice peppers into small pieces and sautee in 1/4 cup
olive oil and garlic until soft. Mix 1/4 c olive oil
and Hidden Valley dry packet. Drain orzo. Add peppers, spinach,  feta and ranch mix.
Stir well. Salt to taste.
