Summer Salmon Kabobs

I am still dreaming over the simple meal I prepared last night.  Fresh summer veggies and seafood seasoned with  a sprinkling of Middle Eastern spices?  Diagnosis…delicious!

Thread salmon, lemon, red onion, bell peppers, and zucchini slices on a skewer.  Sprinkle liberally with salt, cracked black pepper, za’atar, and sumac*.  Cook over charcoal grill (or if you are apartment bound like me…on top of a grill pan and finish off in a 400 degree oven).

I served over fresh spinach and tzakiki sauce from Trader Joe’s.  For a real money meal, I would also serve with a side of freshly toasted garlic naan.

*Za’atar is a popular Middle Eastern spice mixture of basil, oregano, thyme, marojam and sesamae seeds. There is a popular belief that za’atar mixture makes the mind alert and the body strong.  Sumac is another Middle Eastern spice with a tangy sour taste and is perfect accompaniment to seafood.
