Tom Yum is Yummy in my Tummy

Once I try a new food, I will eat it obsessively until I literally get sick thinking about it.  Enter, my new food obsession…tom yum soup!  Tom yum soup is characterized by its spicy and sour broth which is infused with kaffir lime leaves, galangal, lemongrass, lime, fish sauce and crushed chili peppers.  It is pretty easy to make if you have all the ingredients on hand…. but honestly, I own exactly one good knife and my mortar and pestle disappeared in the dark abyss which is my kitchen closet a long, long time ago.  So I decided to cheat a little bit by picking up a small bottle of Maesri tom yum paste at my local neighborhood Asian grocery store.  I love the Maesri brand because unlike most pre-packaged food items they use all natural ingredients and do not contain preservatives.  I added the paste to a pot of boiling water along with shrimp, baby corn, mushrooms, cherry tomatoes and kaffir lime leaves.  The result?

A hearty and delicious soup that will last me for at least four days!

    I wanted to add it last night but I didn’t want to open a whole can of coconut milk for a tiny bit of soup. I will try next time!
