We Did the Mash!

When I was a young buck, waitressing away my days at the local Ruby Tuesdays they introduced mashed cauliflower on the menu as a healthier, low-carb alternative to their potato side dishes.  I never tried it because let’s face it – – mashed potatoes, loaded baked potatoes, french fries, and onion straws OWN any pureed brainy looking vegetable any day.

Since I had a package of cauliflower leftover from Thanksgiving, I decided to finally give the vegetable the old freshman try….and guess what?  It was delicious!  It was the perfect creamy foil to my blackened tilapia and asparagus spears.  Plus the whole meal was super easy and quick to make.  See below for my recipes.

Blackened Tilapia// Rub tilapia loins with a mixture of salt, pepper, garlic, and paprika // Cook in hot skillet with a little bit of olive oil until flaky

Cauliflower Mash // Steam cauliflower florets and garlic cloves in bamboo steam basket // Mash cauliflower and garlic in bowl with wooden spoon when completed // Optional:  Add toppings such as green onions, sour cream, cheese, or butter
